Ingredients
¾ cup unsalted butter
¾ cup brown sugar
¼ cup granulated sugar
1 large egg
1 egg yolk
1½ teaspoons instant coffee or espresso powder
1 teaspoon vanilla extract
1¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup toffee bits
Optional: drizzle with hot fudge sauce
Instructions
1. Brown the butter in a saucepan over medium heat until golden and fragrant. Let cool.
2. Whisk browned butter with both sugars until glossy.
3. Add egg, egg yolk, vanilla, and dissolved coffee. Mix well.
4. Fold in flour, baking soda, and salt until just combined.
5. Gently stir in toffee bits.
6. Chill dough for 30 minutes.
7. Preheat oven to 350°F (175°C). Scoop dough onto baking sheet.
8. Bake for 10–12 minutes until edges are set.
9. Cool slightly before transferring to a rack.
Notes
For a stronger coffee flavor, add an extra ½ tsp espresso powder.
Use dark chocolate chips for extra richness.
Let cookies cool fully before storing to maintain texture.
Dough can be chilled up to 24 hours before baking.
