Ingredients

3 cups frozen hashbrowns, thawed

1 lb ground sausage, cooked and crumbled

6 large eggs

1/2 cup whole milk

1 cup shredded cheddar cheese

1/2 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper, to taste

Butter or oil, for greasing

Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Spread thawed hashbrowns evenly across the bottom of the dish.

3. Layer the cooked sausage evenly over the hashbrowns.

4. In a bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper.

5. Pour the egg mixture evenly over the sausage and hashbrowns.

6. Top with shredded cheddar cheese.

7. Cover with foil and bake for 30 minutes.

8. Remove foil and bake for an additional 15–20 minutes, until golden and set.

9. Let rest 10 minutes before slicing and serving.

Notes

You can assemble the casserole the night before and refrigerate it.

For freezing: wrap tightly before baking, thaw overnight, then bake as directed.

Swap turkey sausage for a lighter version or add bell peppers for more flavor.
