Ingredients
12 slices day-old bread (soft white or brioche)
4 large eggs
1 cup whole milk (240 ml)
1 cup heavy cream (240 ml)
½ cup granulated sugar (100 g)
1 tbsp pure vanilla extract
½ tsp ground cinnamon
4 tbsp unsalted butter
Almond or oat milk (dairy-free option)
Coconut cream (vegan option)
Instructions
Preheat oven to 325°F (160°C). Grease a 9×9-inch baking dish
Cut bread slices into ½-inch cubes and spread in dish
Whisk eggs, sugar, milk, heavy cream, vanilla extract, and cinnamon until smooth
Pour custard mixture over bread, pressing cubes down to absorb
Let rest 15–20 minutes
In a small saucepan, warm 2 tbsp butter until melted, stir in ½ cup heavy cream
Pour sauce over pudding, spread evenly, and sprinkle with remaining butter pieces
Bake 45 minutes until golden brown and puffed
Let cool slightly before slicing
Notes
Bread must be slightly stale to avoid collapsing
Adjust sugar depending on bread sweetness
Toast bread 2–3 minutes lightly if very soft
Vanilla bean paste gives deeper flavor
Store leftovers tightly covered in fridge for up to 3 days
