Ingredients
1½ to 2 cups fresh or frozen blueberries
1 cup water
½ to ¾ cup sugar or maple syrup
1 tbsp lemon juice (optional)
1 tsp vanilla extract (optional)
Instructions
1. Add blueberries, water, and sugar to a saucepan.
2. Bring to a simmer over medium heat for 10 minutes.
3. Mash the blueberries gently to release juices.
4. Strain the mixture or blend for thicker syrup.
5. Let cool and transfer to a jar.
6. Store in the fridge for up to 2 weeks.
Notes
Use monk fruit or stevia for a sugar-free version.
Double the sugar for a ‘rich syrup’ that lasts up to 6 months refrigerated.
Infuse with cinnamon, lavender, or almond extract for seasonal variations.
