Description
A creamy, no-bake dessert featuring layers of spiced Biscoff cookies and whipped mascarpone cream. Simple, sweet, and crowd-pleasing.
Ingredients
1 package of Biscoff cookies
1 cup brewed coffee or chicory (cooled)
16 oz mascarpone cheese
1 ½ cups heavy whipping cream
½ cup powdered sugar
1 tsp vanilla extract
Crushed Biscoff cookies for topping
Instructions
1. Whip the heavy cream until stiff peaks form.
2. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
3. Fold the whipped cream into the mascarpone mixture gently.
4. Dip Biscoff cookies quickly into the coffee.
5. Layer cookies at the bottom of a dish, then spread cream mixture.
6. Repeat layers until dish is full.
7. Top with crushed cookies.
8. Chill for at least 4 hours before serving.
Notes
For a caffeine-free version, use cinnamon milk instead of coffee.
You can prepare it a day ahead and store in the fridge.
Optional: Add cookie butter to mascarpone for extra flavor.
