Description

An easy and moist banana bread recipe using only two ripe bananas. Perfect when you’re short on fruit but want a full-flavored loaf.


Ingredients

2 ripe bananas (about 1 cup mashed)

2 large eggs

1/2 cup unsalted butter (or oil)

1/3 cup milk, yogurt, or sour cream

1/2 cup white sugar

1/2 cup light brown sugar

2 cups all-purpose flour

1 tsp vanilla extract

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

Optional: chocolate chips, nuts, or berries


Instructions

1. Preheat oven to 325°F (163°C). Grease a 9×5 loaf pan.

2. Mash bananas in a large bowl.

3. Add eggs, butter, milk, sugars, and vanilla. Mix well.

4. Stir in flour, baking soda, powder, and salt until just combined.

5. Fold in any optional mix-ins.

6. Pour into the loaf pan and smooth the top.

7. Bake for 60–65 minutes or until a toothpick comes out clean.

8. Let cool 10 minutes, then transfer to a rack.

Notes

For best flavor, use very ripe bananas with brown spots.

Store in an airtight container for up to 3 days or freeze slices individually.

Add cinnamon, nutmeg, or a sprinkle of sugar on top before baking for extra flavor.
