Description
A sweet and simple baby shower cake made with moist vanilla layers and decorated with light buttercream and themed toppers.
Ingredients
2 cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
1 cup sugar
2 large eggs
1 cup buttermilk
1 tsp vanilla extract
½ cup unsalted butter, softened
Blue food coloring or pastel decorations
Instructions
1. Preheat oven to 350°F and grease two 8-inch round cake pans.
2. In a bowl, whisk flour, baking powder, and baking soda.
3. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla.
4. Alternate adding flour mix and buttermilk. Mix until smooth.
5. Pour batter into pans and bake for 25–30 minutes.
6. Cool cakes fully. Frost with buttercream and decorate with baby-themed toppers.
Notes
You can make ahead and refrigerate.
Substitute vanilla with lemon extract for a citrusy twist.
