Description
A soft, spiced apple coffee cake recipe topped with buttery cinnamon streusel. Perfect for cozy mornings, brunch, or afternoon tea.
Ingredients
2 cups all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup unsalted butter (softened)
2 eggs
1 tsp vanilla extract
1 cup sour cream
2 medium apples (peeled and chopped)
Streusel: 1/3 cup flour, 1/3 cup brown sugar, 1/4 cup cold butter, 1/2 tsp cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9-inch pan.
2. Prepare the streusel by mixing flour, sugar, butter, and cinnamon until crumbly. Set aside.
3. Whisk flour, baking powder, soda, salt, and cinnamon.
4. Cream butter and sugars until fluffy. Add eggs, vanilla, and sour cream.
5. Fold in chopped apples.
6. Pour half the batter into the pan, add half the streusel, then repeat.
7. Bake 40–45 minutes or until golden and a toothpick comes out clean.
8. Cool before serving.
Notes
Use tart apples like Granny Smith or Honeycrisp.
Store in an airtight container for up to 5 days.
Freezes well when sliced and wrapped individually.
